My very own dot cake
My Instagram feed is full of dot cakes. As a person who makes their own baking mixes and sprinkles, I felt like I had to make my own version.
The cake
I prepared my vanilla cake mix according to the package instructions. Instead of baking my mix as cupcakes, I baked it in a jelly roll pan at 325 degrees for 17 minutes. I tested the cake with a toothpick, which came out clean and I felt the top to make sure it bounced back.
I let the cake cool and then cut it with a 1.5-inch biscuit cutter. I got 11 pieces - one corner of my cake was too thin to make a cake round.

The frosting
I recently made macarons with cream cheese filling and I had some leftover cream cheese buttercream, so I used that. I used a small amount on top of one round, stacked a 2nd layer, and frosted that with a small amount.
The sprinkles
I used my neapolitan sprinkles. I poured the sprinkles out on a plate, and dipped the top of each cake.
My sprinkles are not exactly dots, so this is not exactly a dot cake. To make a dottier cake, I also tried smashing the sprinkles with a small glass.
The end result
Here are my 2 cakes - on the left is my attempt using the full size sprinkles, and on the right using the crushed sprinkles.
